Pasta Roll-Ups with Chicken, Sun-Dried Tomatoes, and Pine Nuts
We wanted a fresh take on pasta casserole and a new dish to add to our weeknight repertoire.
Why This Recipe Works
We created our Pasta Roll-Ups recipe around poached boneless, skinless chicken parts because they cook quickly and produce a flavorful mix of dark and white meat. We used mozzarella and some of the sauce to make our Pasta Roll-Up recipe’s filling more cohesive and prevent separation. To assemble our pasta roll-ups, we soaked no-boil noodles in boiling water, then mounded the chicken filling on one of the noodles and rolled it around the filling. We covered the roll-ups with sauce and baked it, covered, using a low-heat/high-heat method until the noodles were soft and the filling was hot.
