Spicy Cajun Red Bean and Rice Soup with Sausage
Though beans and rice are hardly an unusual combination, the Cajun spin is revelatory. Could we find substitutes for its esoteric ingredients and create a version that could be served beyond the Bayou?
Why This Recipe Works
For our Spicy Red Bean and Rice Soup with Sausage recipe, tasters preferred small red beans that we soaked in salt water overnight and then simmered in the oven with aromatics and broth. We finished cooking the beans on the stovetop, allowing us to monitor the heat so the rice could cook perfectly. For the pork component of our soup recipe, we used andouille sausage in two different ways. Finally, a little vinegar provided a nice acidic respite from the earthy, porky flavors in our Red Bean and Rice Soup recipe.
