Since recipes that we researched did not agree on what ingredient should provide the heat for this whipped feta recipe, we tested a slew to find out what we liked best, settling on ground cayenne pepper because, unlike fresh green chiles and red pepper flakes, the cayenne was evenly distributed throughout the dip and offered a subtle background heat that didn’t compete with the feta. We added olive oil for fruity notes and some richness, lemon juice to balance the saltiness of the cheese, and a small measure of black pepper to round out the flavor of our whipped feta recipe.
