Why This Recipe Works
When developing our light strawberry-rhubarb cobbler recipe, we found that just a small amount of sugar added to the fruit provided a hint of sweetness and thickened the fruit juices into a light syrup, while keeping the calories to a minimum. We chose to use drop-style biscuits for our light cobbler recipe not only because of their simple preparation, but also because the mixing method they require allowed us to use significantly less butter and still have tender, flavorful biscuits.
