Roasted Stuffed Trout
Small trout are among the few whole fish most supermarkets sell and are an underappreciated staple of the fish case. Sweet and mild, they appeal to even the most finicky eater. Their mildness makes them attractive prepared any number of ways, including our favorite: stuffed and roasted.
Why This Recipe Works
While testing pans, oven temperature, and rack placement for our best roasted stuffed trout recipe, we found that baking dishes and roasting pans both caused the fish to exude moisture and steam in their juices, which proved detrimental to the fish’s flavor and texture. Roasting the fish on a rimmed baking sheet delivered far better results, as there was good air circulation. We experimented with temperatures on the high end of the dial; the advantage came down to a difference in cooking time. As for rack placement for our roast stuffed trout recipe, we stuck with the middle position, as the fish seemed to cook most evenly there.
