Spicy Slow-Cooker Chicken and Chorizo Stew
This Latin-inspired stew features chicken, chorizo sausage, chiles, and garlic in a spicy tomato-based sauce.
Why This Recipe Works
Most slow-cooker chicken stew recipes caution against letting the chicken cook for more than five hours, but we were hoping for a chicken stew that could be in the slow cooker for most of the day. Determined to make this work, we tried an unorthodox approach with our slow-cooker chicken recipe: using chilled broth and tomatoes. We simply put our chicken broth and canned tomatoes in the refrigerator the night before. This trick worked perfectly, as the cold ingredients bought us the time to leave the chicken in the slow cooker for the span of a workday, and now the chicken thighs were perfectly cooked in eight hours.
