Roasted Baby Artichokes
Roasting artichokes concentrates their delicate flavor and intensifies the nuttiness of the vegetable.
Why This Recipe Works
Our best roasted baby artichokes recipe began with selecting the right artichokes: tight and compact, with leaves that “squeak” when rubbed, an indication that the artichoke hasn’t lost its moisture. Small artichokes for our roasted baby artichokes recipe are best trimmed down to the heart. Since there is no choke to remove, we simply coated them in olive oil and roasted them in the oven on a rimmed baking sheet. The oil promotes browning and prevents the edges from burning.
