Why This Recipe Works
Given the fact that they would be spending hours in the slow cooker, we knew that the beans for our country-style pork and beans recipe would have to be sturdy, and great Northern beans stood out in our tests. An overnight soak in water gave them a head start on slowly absorbing the moisture they needed to cook evenly and kept the beans from splitting open during the long cooking process.
