For our best braised pork loin recipe, we recommend monitoring the temperature of the meat after four hours with an accurate instant-read thermometer. We started by browning the pork roast well and smothering it in a spicy blend of onions, jalapeño chiles, garlic, and tomatoes. We added enough broth to partially submerge the roast, inserted a temperature probe through the lid of the slow cooker and into the roast, and monitored the progress. At the end of the cooking time, its internal temperature registered 170 degrees and it was tender and flavorful.
