Why This Recipe Works
For our grilled Argentine-style short ribs recipe, we turned to a technique used in Korean recipes for grilled short ribs: We butterflied the meat, cutting it open like a book, which reduced its thickness to a mere 1/2 inch and exposed its internal fat so that it would render while cooking. This presented the perfect grilled short ribs recipe—we could cook the butterflied short ribs quickly and to an ideal degree of doneness, with nice exterior charring and a tender but pleasantly chewy texture.
