Ingredients: 1 tablespoon, vegetable oil; 4 ounces fresh Mexican-style, chorizo sausage, casings removed; 1 small, onion, chopped fine; 1 , poblano chile, stemmed, seeded, and chopped fine; 8 ounces, pepper Jack cheese, shredded (2 cups); 8 ounces, Colby Jack cheese, shredded (2 cups); 1 teaspoon, cornstarch; 1/4 cup, water
