Bacon adds smokiness, onions offer sweet earthiness, and green and red bell peppers bring vibrant color to this versatile side dish. We cooked the bacon until crispy, added the onion and peppers, and continued to cook until the vegetables were softened before adding the green beans to the pot with a little water and sliced garlic. Canned crushed tomatoes give the dish a saucy consistency and pull all the flavors together. A splash of sherry vinegar and a drizzle of extra-virgin olive oil provide some brightness.
