Why This Recipe Works
Beef pot pie hits all the marks as a comforting, one-dish meal, but many traditional versions are bland-tasting. When choosing a flavorful cut of meat, we found that chuck roast fit the bill without a high price tag. Browning just half of the beef before stewing imparts the rich, deep flavor of searing without overcrowding the pan and having to do two batches. Sautéed mushrooms, tomato paste, beef broth, soy sauce, and Worcestershire bring out the meaty, umami flavor. Finally, a store-bought pie crust is an easy option to top this satisfying pie.
