Shrimp Scampi with Campanelle
Nearly every Italian restaurant features a shrimp scampi dish. Could we bring this restaurant staple into the home cook’s kitchen?
Why This Recipe Works
Pan-searing the shrimp after tossing them with a bit of sugar resulted in a well-caramelized exterior and a moist interior. We gave our Shrimp Scampi recipe bright garlic flavor but infusing it in oil that served as our dish’s base, then incorporated a paste of salt, raw garlic, and extra-virgin olive oil into the finished dish at the last minute.
