North African Vegetable and Bean Stew
Too often, vegetable stews lack the depth, complexity, and richness of their meat-laden counterparts. But that’s not true of stews that are inspired by the bold flavors of North African cuisine.
Why This Recipe Works
We created our own mixture of North African spices to serve as the heart of our North African Vegetable and Bean Stew recipe. Swiss chard added heartiness, and tomato paste gave us tomato flavor without the tomato chunks. Canned beans and dried pasta were convenient alternatives to more labor-intensive fresh beans and pasta. And for the heat that traditionally comes from a hard-to-find North African ingredient called harissa, we made our own spicy paste of ground chiles, cumin, coriander, garlic, and olive oil, which we spooned into our North African Vegetable and Bean Stew.
