Oven-Roasted Salmon with Soy-Herb Vinaigrette, Snow Peas, and Carrots
Could we create a one-dish recipe for salmon and vegetables that produced professional-level results?
Why This Recipe Works
To ensure the fish in our Oven-Roasted Salmon recipe cooked evenly, we divided a center-cut fillet into four equal pieces and cut slits in the skin to render their fat. We used a hybrid cooking method for perfectly cooked fish: We preheated a baking sheet in a very hot oven, then reduced the heat once we added the fish. An Asian-flavored vinaigrette dressed up our Oven-Roasted Salmon recipe, and a foil packet of vegetables cooked alongside the fish completed our one-dish meal.
