Mediterranean Calamari Stew with Garlic and Tomatoes
This nice alternative to fried calamari puts the sweet, subtle flavor of the calamari front and center.
Why This Recipe Works
Onions, garlic, and celery gave our Calamari Stew recipe a clean, vegetal base. Simmering the calamari in white wine made it tender but not tough, while canned whole tomatoes gave our stew a fresh flavor and nicely thickened texture. For our Calamari Stew recipe’s briny element, we used green olives and capers; finally, red pepper flakes gave our stew just the right amount of heat.
