Quinoa and Vegetable Stew with Avocado and Cilantro
In countries along the Andean highlands, quinoa plays a starring role in many dishes. We set out to re-create one of our favorites.
Why This Recipe Works
Our easy-to-find substitutes for the unusual spices called for in traditional quinoa and vegetable stew recipes were paprika, cumin, and coriander. Adding these spices to the pot after we’d sautéed our aromatics kept them from burning. Red potatoes and native corn gave our recipe its South American feel. We added the quinoa after the potatoes had softened so that it wouldn’t overcook but would still release starch that thickened the stew.
