Artichoke, Pepper, and Chickpea Tagine
Vegetable tagines aren’t as well known as meat tagines. But they should be.
Why This Recipe Works
For our vegetable tagine recipe’s main ingredient, we thawed and drained frozen artichokes, then sautéed them to drive off any remaining moisture. Canned chickpeas were convenient and only needed to be simmered in the flavorful broth, which we thickened with flour. For the lemon flavor that distinguishes authentic tagines, we used lemon zest. Finally, we enriched the vegetable tagine recipe using Greek yogurt.
