Gas-Grilled Soft-Shell Crabs
Think the only way to get crisp soft-shell crabs is to order them fried from a restaurant? We achieve winning results by grilling them at home.
Why This Recipe Works
We discovered a few things while developing our grilled soft-shell crabs recipe: Since the crabs should be crisp, it’s no surprise that high heat delivered the best results. We grilled plain crabs as well as crabs basted with melted butter and oil. The plain crabs did not crisp up as well as those basted with fat, and they stuck a bit to the grill. Ultimately, we settled on butter as the fat of choice for our grilled soft-shell crabs recipe because we preferred its flavor with the crab to that of oil.
