Lemon and Goat Cheese Filling

Why This Recipe Works
For an easy stuffed chicken breast recipe, we used bone-in, skin-on breasts and rather than cutting into the meat, we simply tucked the filling under the skin. Not only did the skin hold the filling in place in our easy stuffed chicken breast recipe, but the filling basted the meat as it cooked, keeping it perfectly moist and juicy. To ensure that the skin would crisp up, we raised the temperature of the oven and baked the breasts at 450 degrees.
