Chipotle Corn Tortillas
In Mexican cooking, corn tortillas are as ubiquitous as sandwich bread. And since they’re much easier to make than sandwich bread, why not opt for homemade?
Why This Recipe Works
For an accessible corn tortilla recipe, we used widely available masa harina, adding salt and oil to improve the flavor of the dough. Allowing the dough to rest before shaping gave it time to hydrate so that the tortillas were formed with ease. A tortilla press is, by far, the best tool for pressing the tortillas into even rounds. A cast-iron comal would serve as a traditional cooking utensil for corn tortillas, but we found a heavy-bottomed nonstick skillet or griddle to work perfectly for our corn tortilla recipe.
