Chicken Pizzaiola with Provolone and Capicola
Literally translated, pizzaiola means “in the style of the pizza maker” and indicates that the dish includes tomato sauce and cheese, typically both mozzarella and Parmesan. This dish is essentially a crustless pizza: boneless, skinless chicken breasts are topped with tomato sauce, cheese, and pepperoni and baked.
Why This Recipe Works
For our chicken pizzaiola recipe we liked the chicken best when it was coated in Parmesan, baked on top of tomato sauce, and topped with mozzarella and pepperoni. We found that this method helps safeguard the chicken from overcooking, as the sauce provides plenty of moisture and allows the cheese to brown well. The hotter the oven, the quicker the chicken cooked and the juicier the meat remained, but the mozzarella and pepperoni burned if baked too long at too high a heat. We compromised in our chicken pizzaiola recipe by giving the chicken a head start, then topping the par-cooked chicken with the provolone and capicola before finishing it.
