Skillet-Roasted Pears with Caramel-Pepper Sauce and Blue Cheese
We wanted to take this ordinary fruit and transform it into a rich and easy dessert.
Why This Recipe Works
For our skillet-roasted pears recipe, we decided to use moderately ripe pears because they were the most flavorful and tender once cooked. We then constructed the basis for our caramel sauce, bringing water and sugar to a boil in a skillet. We slid halved pears into the hot mixture and let them cook in the slowly browning caramel. While developing our skillet-roasted pears recipe, we noted that it was easiest to trim the bottom of the pears before cooking them, rather than after, so that they would stand upright on the plate.
