Why This Recipe Works
For our baked pineapple recipe we found it easier to buy fresh pineapple that had already been peeled and cored. Canned pineapple, which was softer than fresh, was a poor substitute. For the first half of baking, we covered the pineapple with foil. To caramelize the fruit, we then let it bake uncovered until golden.
