Why This Recipe Works
Since the crabs should be crisp, it’s no surprise that high heat delivered the best results in our grilled soft-shell crabs recipe. We grilled plain crabs as well as crabs basted with melted butter and oil. The plain crabs did not crisp up as well as those basted with fat, and they stuck a bit to the grill. Ultimately, we settled on butter as the fat of choice in our grilled soft-shell crabs because we preferred its flavor with the crab to that of oil.
