Grilled Halibut Steaks with Chipotle-Lime Butter
Halibut steaks have plenty of flavor and are both tender and moist—provided you don’t overcook them on the grill.
Why This Recipe Works
For our grilled halibut steaks recipe, we chose boneless halibut steaks, since they are the most common cut in supermarkets. Next, we rubbed the heated cooking grate of the grill with a wad of paper towels dipped lightly in vegetable oil and held by long-handled tongs. This extra step not only lubricated the grill, but cleaned off any lingering residue as well, which was important given the delicate flavor and light color of most fish. We also found that using a single-level, moderately hot fire for our grilled halibut steaks recipe prevented the halibut from sticking, as fish grilled over a superhot fire will burn.
