A staple dish in the diet of American Indians for centuries, succotash is a delicate summer mixture of fresh corn and lima beans. As simple as it sounds, however, there are plenty of recipes that do it disservice.
Why This Recipe Works
Because fresh lima beans can be difficult to find, we decided that frozen lima beans were the way to go in our succotash recipe, offering a fresher taste and quicker cooking time. As for the corn for our succotash recipe, kernels scraped from fresh ears tasted much sweeter than bland frozen corn. Fresh kernels also gave the succotash a nice crunch; frozen kernels were soggy. We also found extra flavor in the cobs, which we scraped clean using the back of a knife to release any remaining bits of kernels.
