Asparagus Wrapped with Prosciutto
Sweet, grassy asparagus wrapped in salty prosciutto is an elegant and incredibly easy addition to any antipasto platter.
Why This Recipe Works
Most asparagus-wrapped prosciutto recipes suggest roasting the asparagus spears before wrapping them in prosciutto, but we found that the slender asparagus spears that we preferred were limp and overcooked before they could achieve any flavorful browning. We turned up the heat and broiled them instead, which cooked the spears to perfection in about five minutes. While plainly seasoned asparagus wrapped in prosciutto was good, we heightened the overall flavor and complexity of our asparagus-wrapped prosciutto recipe by sprinkling the just-broiled asparagus with balsamic vinegar and grated Parmesan cheese before wrapping each spear in a wide ribbon of prosciutto.
