Skillet French-Style White Bean Casserole
We wanted to create a hearty French white bean casserole (based on the classic cassoulet) that would be both simple and quick to make in a skillet.
Why This Recipe Works
For a streamlined white bean casserole recipe that tasted as good as a traditional cassoulet, we replaced the hard-to-find French sausages with kielbasa and andouille. For our pork, we settled on country-style pork ribs, which have more fat and flavor than spareribs or baby-back ribs. Duck confit (only found in high-end grocers), was dropped entirely. While traditional cassoulet recipes are prepared with kidney-shaped beans that are hard to find stateside, we decided cannellini beans would work just fine. Canned beans allowed for a quicker cooking time.
