Spiced Pork Tenderloin with Potato Rösti
For a weeknight supper, nothing is simpler or tastier than a juicy pork tenderloin dressed up with a flavorful spice rub and roasted to perfection. That is, unless you want to take it to the next level and pair it with a wedge of crispy potato rösti, the national potato dish of Switzerland.
Why This Recipe Works
To add flavor to our spiced pork tenderloin recipe, we put together a warm spice mixture of caraway seeds, coriander, allspice, and nutmeg. After trimming the silver skin (a thin, tough membrane found on the surface), we rubbed the spices onto the meat. We added some butter to our skillet, browned the pork all over, and transferred it to the oven to finish cooking. Browning the tenderloins flavored not only the meat also but the potatoes for our potato rosti recipe, which we would cook in the same pan once the tenderloins had been removed.
