Why This Recipe Works
For the best pan-roasted pork loin recipe, we first seared the meat in the skillet for great browning. We also tied the roast to ensure a uniform shape that fit into the skillet, promoted even cooking, and yielded attractive, round slices. After browning, we slid the pork loin into the oven to finish cooking through. To ensure perfectly done pork for our pan-roasted pork-loin recipe, we removed the roast from the oven before it reached the desired temperature and let its temperature rise as it rested on the carving board.
