Charcoal-Grilled Veal Rib Chops with Herb Paste
Veal chops take well to the grill—their sweet, mild flavor is perfectly accented by smoky hints from a live fire. But the right grilling technique is key to producing beautifully seared chops with tender, moist, and flavorful meat.
Why This Recipe Works
For our charcoal-grilled veal rib chops recipe, we quickly realized that veal chops do not fare well when cooked directly over hot coals—the exterior burns before the interior is done.
