Lentil and Escarole Soup
The Italian way of turning the humblest ingredients into lusty soups is at work in lentil and escarole soup. We try our hand at this traditional soup and pay close attention to the lentils and escarole to ensure that we get the best flavor and texture out of both.
Why This Recipe Works
Lentils come in a wide array of colors, but we chose to use common brown lentils, which are typical, for our lentil and escarole soup recipe. We noted that lentils can quickly turn mushy from overcooking, so we watched them carefully. While many lentil and escarole soup recipes call for a long simmering time once the escarole is added, we preferred a short simmer so that the leaves retained some of their character.
