Peas with Prosciutto
You don’t need to be Italian to know that sweet peas and salty prosciutto are a match made in heaven. This side dish with enormous appeal is ready to serve in less than 20 minutes.
Why This Recipe Works
While a peas with prosciutto recipe made with fresh peas is delicious, frozen peas work fine and are easier to find at the market and prepare. For our peas with prosciutto recipe we briefly blanched the peas in boiling water until they were just tender, then drained them well. We sautéed prosciutto cut into ribbons in butter (which we preferred over olive oil because of its milky sweetness), added a diced red onion for allium flavor, then stirred in the peas until heated through.
