Whipped Mascarpone Cream with Marsala and Berries
Italian mascarpone cheese is known for its thick, velvety texture and rich, subtly tangy flavor. We wondered if mascarpone whipped with sugar could provide a creamy, more interesting alternative to plain whipped cream to serve alongside fresh berries.
Why This Recipe Works
For a light and smooth whipped mascarpone cream and berries recipe, we found that when whipped on its own mascarpone was thick and pasty, when whipped together with cream, the mixture curdled, but when we whipped the heavy cream first and then added the flavored mascarpone we got the light, airy mixture we were hoping for. We topped the whipped mascarpone cream with sweetened fresh fruit, but found that the fruit was vastly improved with a splash of sweet Marsala wine.
