Oven-Fried Chicken and Roasted Sweet Potato Salad
Oven-fried chicken is a great substitute for the real deal—when it’s done right, that is. While the oven was fired up, we wanted to whip up an accompanying roasted sweet potato salad for a complete—and quick—meal.
Why This Recipe Works
In search of the perfect coating for our oven-fried chicken recipe, we kept testing and eventually ended up with an unlikely winner: Melba toast. For flavor, we added tangy Dijon mustard and dried thyme. Pulverized and tossed with a little salt, pepper, and oil, the crackers made for a crunchy chicken coating with a beautiful golden hue once baked. Next, we needed to find the best breading recipe for our oven-fried chicken recipe and determined in the end that nothing, not buttermilk or mayonnaise or sour cream or water, worked better than egg, which effectively glued the crumbs to the chicken.
