Spanish-Style Braised Lentils with Sausage
Spanish cooking is widely known for its innovative dishes prepared from humble ingredients. Case in point: meaty green lentils braised with robustly flavored morcilla sausage. Cheap and healthy, the lentils readily absorb the flavors of the robust sausage.
Why This Recipe Works
We wanted a quicker approach to the classic Spanish-style braised lentils and sausage recipe and decided the best way to make that happen was to give the lentils a head start by simmering them until tender. Then, when the lentils were just about tender, we combined them with the sausage and flavorings and finished the whole dish in a hot oven to reduce the cooking liquid to a glossy glaze and brown the sausage. Green lentilles du Puy were our choice for this dish for their firm texture and hearty flavor. We tried a variety of readily available replacements for Morcilla sausage for our sausage and lentils recipe, from chorizo and linguiça to Italian-style sausages and kielbasa, and thought the latter proved the best bet because its smoky, sweet flavor, compact texture, and rich nature made it a natural with the lentils.
