Light Chinese Chicken Salad with Hoisin Vinaigrette
Our light, crisp version of this salad has fewer ingredients but plenty of Asian flavors.
Why This Recipe Works
We discovered that a surprisingly small amount of oil added the perfect richness to the dressing for our Chinese chicken salad recipe and still allowed the brighter flavors of the salad to shine through. Rice vinegar matched well with the other salad components. Other vinegars, such as white wine vinegar, were too harsh and fought with other flavors. The dressing still lacked depth, so we rummaged through our Asian pantry items and settled on hoisin sauce, for sweetness and a hint of spiciness. We settled on napa cabbage, or Chinese cabbage, for our Chinese chicken salad recipe because its slight mustard flavor wasn’t overpowering and worked well with the sweetness of red peppers and carrots.
