Salmon Salad with Red Potatoes and Green Beans
Too many modern renditions have gone overboard with this classic’s signature “lightness,” leaving us hungry for more.
Why This Recipe Works
For moist and flavorful salmon for our salmon salad recipe, we turned to our trusty poaching method, which entails bringing a mixture of water, lemon juice, a bay leaf, and whole black peppercorns to a bare simmer, adding the seafood, and cooking for several minutes. We used classic salade niçoise as a model for our salmon salad recipe and added green beans and sliced boiled potatoes to the plate. We sprinkled the potatoes with a dill and mustard vinaigrette right after they came out of the cooking liquid because we’ve found that hot potato slices soak up dressing more thoroughly than cool ones do.
