Ingredients: 1 1/2 pounds, large shrimp (31 to 40 per pound), peeled and deveined (see illustration below); , Salt and ground black pepper; 1 , medium red onion, minced; 1 , large red bell pepper, stemmed, seeded, and cut into 1/2-inch pieces; 1 teaspoon, extra-virgin olive oil; 6 , medium garlic cloves, minced or pressed through a garlic press (about 2 tablespoons); 1 pound, orzo; Pinch, saffron; 4 cups, low-sodium chicken broth; 1 cup, water; 1 (28-ounce) can, diced tomatoes, drained; 1 cup, frozen peas (optional); 4 teaspoons, minced fresh oregano leaves; 4 ounces, feta cheese, crumbled (about 1 cup); 4 , scallions, sliced thin; 1 , lemon, cut into wedges (for serving)
