Baking pears in the oven renders them tender and sweet and produces a syrupy sauce that is perfect for serving.
Why This Recipe Works
For our oven-poached pears, we cut the pears in half and arranged them in a baking dish, added the wine along with some sugar, covered the baking dish with foil to keep all of the liquid from evaporating, and baked the pears. By baking the pears, rather than poaching them on the stovetop, we found that we could decrease the amount of wine, cutting costs and saving supplies. The resulting pears were exactly what we had hoped for—tender and brightly flavored with the added bonus of a syrupy, sweet sauce.
