We wanted to transform this fairly ordinary fruit into a simple, yet extraordinary dessert. The solution? Bake in the oven.
Why This Recipe Works
When we peeled and sliced bananas for our baked bananas recipe before baking they turned to mush, but when we baked them whole they were soft yet still held their shape. Covering the baking dish for our baked bananas recipe with foil for the first part of baking created a moist, butter-and-sugar-scented environment for the bananas to start cooking. Finishing the bananas uncovered in the oven allowed them to become golden brown. The butter, sugar, and juices reduced to a rich, syrupy sauce—perfect for drizzling over the browned bananas.
