Slow-Cooker Braised Lamb with Red Wine and Cumin
Tender lamb, scented with cumin and bathed in a sweet-tart red wine sauce, is a meal that is sure to impress, so long as the dish is not overly gamy.
Why This Recipe Works
As the first step of our slow-cooker braised lamb recipe, we knew we had to build a bold braising liquid by simmering and reducing red wine with our aromatics until it had concentrated flavor and lost much of its astringency. We also found that adding tomato paste to the sautéed aromatics gave the sauce a touch of sweetness, while adding chicken broth balanced the flavor in the slow cooker. To help bring out the meaty flavor of the lamb without the hassle of having to brown the meat before adding it to the slow cooker in our slow-cooker braised lamb recipe, we added a dash of soy sauce.
