30-Minute Chicken Fricassee with Artichokes and Leeks

Fricassee is a classic French dish in which chicken (or rabbit) is browned and simmered in a skillet with vegetables, seasonings, broth, and heavy cream. It’s a simple, stick-to-your-ribs dish that requires a minimal amount of preparation, but it does take time to both brown and braise the chicken. For this recipe, we wanted a quick version that could be on the table in 30 minutes.
