Soba Noodles with Pork and Scallions
Japanese soba noodles are made from buckwheat flour and have a nutty, earthy flavor and chewy texture. While they are typically served in a simple broth, we envisioned them as a complete—and quick—meal with seared pork, chewy shiitake mushrooms, and sharp scallions.
Why This Recipe Works
We chose quicker-cooking part buckwheat/part wheat flour noodles for our soba noodles with pork recipe. Quick-cooking lean pork tenderloin was our natural choice for our soba noodles and pork recipe, as it stir-fried in minutes and packed rich flavor without much fat. We experimented with countless combinations of various Asian ingredients and aromatics before settling on a blend of soy sauce, mirin (seasoned and sweetened rice wine), and rice vinegar spiked with plenty of garlic and ginger for our sauce.
