Why This Recipe Works
For a quicker lamb curry recipe, we chose inexpensive shoulder chops, removing the meat from the bones and cutting it into small cubes so it only required an abbreviated cooking time to become tender. When it came to spices for the dish, many lamb curry recipes suggest creating a curry from a blend of different herbs and spices. Although we liked this idea, the flavor difference between a homemade curry mix and a premixed curry powder from the supermarket turned out to be very small—certainly not worth searching out the five or six different spices required for the homemade mix.
