Why This Recipe Works
With convenience in mind, we decided to oven-roast bone-in, skin-on chicken breasts instead of braise them for our Mediterranean chicken casserole recipe. We started our sauce on the stovetop, too, which meant we could use the pan juices to build extra flavor. Adding thyme, parsley, kalamata olives, and frozen artichokes (which we had already roasted while the chicken was searing to improve their flavor) to our sauce base of reduced white wine gave us the flavorful combination we were looking for in our Mediterranean chicken casserole recipe.
