Spiced Tea with Milk (Masala Chai)
Chai, Indian spiced tea with milk, has taken this country by storm. You can order it in coffeehouses and buy premade mixes and chai tea in bags, but these ersatz versions all fall short. Fire up the tea kettle—we take the mystery out of making chai at home.
Why This Recipe Works
For our masala chai recipe, we started with a base of strong black tea of almost any variety—for each serving, we steeped one tea bag in boiling water for five minutes. We then infused whole milk for our chai recipe with a blend of spices—cinnamon, cardamom, black pepper, cloves, and vanilla. When the milk was fragrant, after about five minutes, we sweetened it lightly with sugar, strained out the spices, and poured the spiced milk into the brewed tea for a soothing, perfectly balanced chai redolent of warm, exotic spices.
