We prove that it’s possible to roast garlic on the grill by adapting the classic oven-roasting technique.
Why This Recipe Works
We wanted a grill-roasted garlic recipe that would produce softened cloves with a creamy consistency. To get there, we avoided a very hot fire, which scorched the garlic even when we wrapped it in two layers of foil. If using a two-level fire, simply place the garlic packet on the cooler side of the grill and cook, turning once, until the garlic gives a bit when gently squeezed. If you are using our grill-roasted garlic recipe over a single-level fire, you must wait until the fire has died down.
